This is my favourite low-fat salad dressing at the moment. Simple, creamy and fresh. It has a lot less calories than both mayonnaise and oil-based dressings - but it is wonderfully creamy and indulgent!
It's also super easy to make and you don't have to worry about emulsifying oils together or anything complex! Just bung all the ingredients in a bowl, mix, and you're away.
My favourite way to serve the Greek Yoghurt Salad Dressing is with a totally green salad, chocked full of different types of lettuce and avocado. The kids love it too, so it makes things a little easier when it comes to getting them to eat their greens!
Greek Yoghurt Salad Dressing
Serves 6
Ingredients:
1 tbsp of Greek yoghurt
1 heaped tsp of Dijon mustard
Half a tbsp of red wine vinegar
Salt and pepper
1 tbsp of Greek yoghurt
1 heaped tsp of Dijon mustard
Half a tbsp of red wine vinegar
Salt and pepper
HOW TO MAKE:
1. Combine all the ingredients in a bowl.
2. Throw on your salad, toss and serve immediately!
3. You could also add chopped fresh herbs. Basil is particularly good.
