The First Cucumber of the Year!

For some reason, cucumbers do extremely well in my greenhouse. This is my very first cucumber of the season. Now, you are slightly limited with what you can do with them, but I just love them straight off the plant in big chunks for lunch or in salads. When they really start going, we have a fresh cucumber every other day.
Kids love to watch them grow too and can't wait to try them! This cucumber was particularly juicy, refreshing and sweet. Love them!
Let me know if you have any cucumber recipes. Mr Mean likes to cut them into thin strips and mix them with shredded crab sticks and salad cream. What do you do with yours?

  1. You make fresh pickles from cucumber. My mum used to make them to go with cold cuts of roast meat.
    Mum halves a cucumber lengthwise, then slices into thin slices. Place in colander and sprinkle with 1-2tbsp salt (this helps remove excess water). Turn the slices with your hands and try to rub salt gently onto all the slices. Leave for 30mins until wilted, then rinse salt away with cold water. Leave to drain. Add sugar to malt vinegar until it's sweet/sour to your liking. Place the rinsed, drained cucumber in a large bowl, pour over the swetened vinegar to cover the cucumber and leave 45-60 mins. Its sweet crunchy and just a little sour. There aren't usually any left-overs :)
